Greek: Horiatiki (Village Salad)

(serves 2)
Ingredients:
- 2-4 vine-ripened tomatoes (cut in large wedges)
- 1 English cucumber (sliced in large chunks)
- 1 green pepper (sliced in large chunks)
- 1 red onion (sliced)
- ½ cup Ladolemono dressing
- Dash red wine vinegar
- Salt and pepper to taste
- 8 ounce block feta (cut in cubes)
- ½ cup pitted kalamata olives
- fresh oregano for garnish (optional)
Procedure:
- In a large bowl, add all of the vegetables: tomatoes, cucumber, green pepper, red onion
- Add a dash of red wine vinegar and the salad dressing, toss gently with salt and pepper
- Top with olives and feta cheese, then sprinkle with oregano
